This is a very special Absinthe from a tiny little distillery, based in the French Jura. The atmosphere there alway reminds me of the atmosphere in one of the former clandestine distilleries in the nearby Val de Travers. However, I would like to stress, that this is a fully licensed distillery which works completely authorised!
At one of the meetings I had with Francois Aymonier last year, I was telling about Absinthe Brevans H.R. Giger, which I developed with Oliver Matter, back in 2007. The idea behind was so fascinating for Aymonier, that he started a similar project - Absinthe La Rebelle.
It's an exceptional product that nobody would do, because it's financially nonsense, but especially here you can see the benefits of a very small distillery - they can simply do whatever they think is a cool idea!
Usually Absinthe distilleries use grain or grape base alcohol, but what if you would swap that for Marc du Jura? Well, it's going to set the distillery back a fortune, but the result is spectacular! All the fruityness of the Chardonnay and Savagnin grapes are there and they go so well with grand wormwood, Aniseseed, Fennel and Coriander.
