With a pickaxe (La Pioche) they dig out the Genianroot in the French Jura. It's a hell of a job and demands a lot of force and endurance! The root is washed with water, cut into small pieces and then macerated for quite a while in base alcohol. After the distillation they add citrus fruits and a bit of sugar. Relativly low in alcohol this is consumed as an aperitif and we recommend to try it out instead of Vermouth - goes very good!
