The mirabelle is one of the smallest plums — and one of the most aromatic. Little fruit, much concentration: honeyed, warm, with a fine marzipan note. Georg Hiebl distils it single-variety and captures exactly that warmth.
The fruit
Small, golden, harvested fully ripe — only then does the mirabelle give up its full aroma. It takes many fruits for a single bottle, and that is what makes the brandy so dense.
Aroma & taste
Warm, ripe mirabelle on the nose, honeyed, with a hint of marzipan and stone-fruit kernel. Full and soft on the palate, the fruit round and intense, with a long, warm finish.
How to enjoy it
Neat at around 16–18 °C in a brandy glass. Not ice-cold — the fine sweetness needs warmth to show. A round, harmonious digestif.

His aim is simple to state and hard to achieve: preserve the character of a fruit in its original form and concentrate it in the glass — until aroma, colour and taste become one. Nothing added from the outside, no shortcuts. Only the best raw fruit, carefully handled.
Single-variety by conviction
The range holds over 100 different fruit brandies and liqueurs. Hiebl specialises in single-variety distillation — especially of apples and pears — so each variety keeps its own character instead of disappearing into a blend.
Craft Distillery of the Year 2026
At Craft Spirits Berlin 2026, Europe's most important competition for craft spirits, Hiebl prevailed against 120 distilleries from 17 nations to take the overall title: Craft Distillery of the Year 2026. From 47 entries came four "Best in Class" golds, plus 19 further gold, 20 silver and 8 bronze medals — on top of several earlier "Distiller of the Year" honours.
