Brands are made from the mash
Fruit brandy begins its career as a mash. The required alcohol is produced through fermentation, which ensures that aromas are released from the fruit and become part of the mixture. How long a mash needs to completely dissolve the required aromas is in the hands of the master distiller. The subsequent burning process is the heating of the mashed material. The type of still guarantees that the aromas are homogeneously integrated into the rising steam, reach the cooling coil through a riser pipe, where the steam is cooled and leave the still in droplet form.
