Back in 1902 Armand Guy developed a new liquor, something from typical Botanicals of the region around Pontarlier. Since many pines grow there, why not a pine liquor? Based on young pine buds this specialty reflects the impressing aroma typically found in the deep woods of Franche-Compté. In early June fresh pine buds are picked in an altitude of around 2000m. A good picker collects about 10kg per hour. Obviously, the pickers take responsibility when picking, as the branches should still grow after this ‘harvest’. Since deer also love these pine buds, harvest is only possible in a very short period just after snow has melted.
Half of the harvest is dried underneath the rooftops of the distillery the other half is macerated in alcohol and distilled. Then the dried buds are added to the distillate to give it a nice green tint and of cause a lot of aroma. At the end of production some sugar is added to give it a nice round sweetness. The liquor is adjusted at 40% ABV. The intense taste instantly reminds of the wonderful fragrance you find in the woods of Haut-Doubs. Since over 100 years, this liquor makes a tasty digestive, but has just recently found its way into Mixology. Once a bottle has been opened, you may store it in your fridge.

Distillerie Guy
Florentin's cousin, a cheesemaker from Champagnole, supported Armand Guy from Pontarlier financially to set up a distillery. Armand Guy bought a piece of land on Rue des Lavaux, built a building on it, bought a still and started his business. For Florentin's cousin, Armand Guy to finance it, the absinthe produced there had to bear his name. As managing director, Armand Guy was responsible for the success of the business. Florentin Cousin and Armand Guy separated in 1906 after Guy had repaid the last installment of the loan. Florentin Cousin then founded a distillery in Champagnole which his descendants later sold to H. Deniset Jeune from Pontarlier. After separating from his brothers, Ernest Cousin took up work as a distiller in Francbourg. He produced about 120,000 bottles of Absinthe Cousin Jeune a year.
The buildings in Rue de Lavaux, Pontarlier still exist today and absinthe is still distilled there today - it's the Guy distillery.
